Dr. Lyon's aha moment came from studying women in midlife who'd done what society told them to: stayed thin, watched their weight. But their brains showed early Alzheimer's signs. Lyon says they weren’t over fat, they were under muscled. This discovery led her to focus more on muscle quality and the fat within it rather than overall body fat percentage. "It's the difference between a filet and a wagyu steak."
